Here is a super easy 10 minute dinner recipe that looks like barf but tastes like awesomeness.
- Frozen wok veggies (mine had carrots, romano beans, broccoli, red onion and something yellow that looked like carrot)
- 1/2 cup coconut milk
- 1/2 cup water
- Teaspoon of green curry paste
- Mixed beans
- Slice of smoked salmon
Toast the green curry in a pan for a few minutes then pour in the coconut milk. Add the veggies (however much you want) and the beans. Simmer until hot then add the slice of smoked salmon. It'll cook in a minute so take it off the stove when it starts breaking into pieces. Serve with a slice of lime and something cold to drink.
I was surprised by my own genius and how well this turned out! Super easy and inexpensive!
